Processed States The mussels are sorted prior to steam cooking. Once the mussels have been cooked they pass through a wash spray to cool them before the top shell is manually separated from the bottom shell for the halfshell product. The half shell is then snap frozen. Once frozen the product is graded for size and weight and then packed.
